Potassium is another important mineral for the body. It is very important for muscle health. It is also an electrolyte which is needed to balance out sodium and chloride. Potassium helps the body maintain the right amount of fluid. Because the heart is muscle potassium is vital for proper heart health and function. Potassium is also found in tomatoes and plums. Tomatoes are also a good source of vitamin A. Vitamin A is important for eye health. It also helps keep the skin and mucus membranes from drying out. While plants to not contain Retinol they do contain beta-carotene which the body can convert to retinol (vitamin A) so are listed as containing vitamin A on labels, like if you buy a can of tomato sauce. Some studies indicate beta carotene may help in people who already have coronary artery problems. One benefit you may have heard of is the vitamin C in fruits and vegetables. Vitamin C is needed to prevent scurvy. It aids the body in healing from wounds and in oral health. Vitamin C is thought to be an immunity booster. It also does help with colds because it is a natural antihistamine. Vitamin C is found in high amounts in sweet potatoes, kale, red peppers, kiwi fruit, citrus fruit, mangoes and cauliflower.
